As the weather hots up and thoughts turn to summer holidays, there’s no doubt that most people will be thinking of a ‘staycation’ due to travel restrictions, but this doesn’t mean you can’t enjoy a delicious rum cocktail or two to remind you of more exotic locations. Here are some ideas to tempt your taste buds:
Rum Babalu
Add two parts of your favourite rum to some freshly squeezed lime juice, a squirt of maple syrup to taste and a little dash of Angosturas bitters, along with ice, to a cocktail shaker, and shake well. Pour into a highball glass and top up with ginger beer and an orange peel garnish.
Morse Code
A fabulous summer red colour, this cocktail is made using one and a half parts white rum to half a part pineapple flavoured rum, a squeeze of fresh lime juice and three-quarters of a simple sugar syrup, finished with a muddled strawberry to make a simply delicious taste of summer.
La Samanna Rum Punch
Last but not least, no cocktail list would be complete without a lovely rum punch recipe. Add half an ounce of dark rum to one ounce of gold rum, along with one and a half ounces of a simple sugar syrup to taste. Then, add fresh lime juice and passionfruit juice, along with half an ounce of guava berry liqueur for a final kick. Finish with a dash of Angostura bitters and garnish with a fresh pineapple wedge.
